Coffee time....

 My sister was coming for coffee... had this recipe I wanted to try...

RASPBERRY SWIRL ROLLS
*Makes 16 rolls*

YOU WILL NEED:
Dough:
1 cup milk
2/3 cup granulated sugar
2 packets active dry yeast (1 1/2 tbs)
1 stick (4oz) unsalted butter, softened
2 large eggs
1/4 tsp salt
4 1/4 to 4 1/2 cups all-purpose flour
Filling:
10oz frozen raspberries (not thawed)
1/4 cup plus 2 tbs sugar
1 tsp cornstarch
Glaze:
3/4 cup confectioners' sugar
3 tbs unsalted butter, melted
1 1/2 tbs heavy cream
DIRECTIONS: 1. First, heat up the milk until it is lukewarm. Add the sugar and yeast to it. Let sit for about 5 minutes, until the mixture is frothy. But yeast into mixer have it running, add in the softened butter, eggs and salt. Slowly begin adding in the flower until a soft dough forms (if the dough is too sticky, add a little more flour). Using the dough hook attachment, beat the dough on medium-high speed for about 10 minutes. Next, form the dough into a ball, place in a greased bowl, cover and let sit in a warm place for about 1 to 2 hours, until it doubles in size.

2. Prepare your baking pan by lining it with parchment paper and buttering/spraying it with cooking spray. Once the dough has risen, turn it out onto a floured surface and roll it into a 10x24 inch rectangle.

3. In a small bowl, mix together the frozen raspberries, sugar and cornstarch. Spread that over the dough and tightly roll it up. Using a sharp knife, cut the log into 16 equal sized slices (you will need to do this pretty fast, because the raspberries will start melting very quickly). Place the rolls into your prepared baking pans, cover them and let them rise in a warm place for another hour to two hours.

4. Preheat your oven to 425 deg F (if you think this is too hot for your oven, turn the temperature down to 400 deg F, or even lower if needed), and bake the rolls for about 25 minutes until they are beautifully golden brown and the juices are bubbling. Let cool. Next, prepare your glaze by whisking together the confectioners' sugar, butter and heavy cream in a small bowl. Once the rolls have cooled a little, drizzle the glaze over the top. Serve warm!

Great weather for a walk...
 If you dare to try it without your mud boots...
Who would of thought you needed mud boots in the city!
Makes one want to go wadding and puddle jumping....if you don't the cars will puddle splash as they drive by.

National Waffle Day...

Did you know March 25th is National Waffle Day...

Well I didn't until I read This Blog...

And I read it just as I was wondering what to make for supper...
So we had Waffles on National Waffle Day...

Had to find a healthy recipe...
It was yummy... (but I did put some unhealthy bacon with it...oops:)

(Note... I used coconut milk in the recipe... I believe that is what she uses...
but didn't put the coconut in the recipe...but coconut milk is in the directions.)

Last Trip..

Well it was the last trip for  Hubby's back tire....
Last trip to the downtown market ....
And we couldn't resist one last trip to Quartermaster Depot...
To that little shop where I bought the linens...
Staff all dressed....
One last piece of that delicious pie!

Vintage Thingy Thursday...

Yuma Quartermaster Depot State Park...
Has a wonderful little place that you can buy the best taking pie... 
I am not a pie person...but their pie was delicious!!
In the back they have a little gift shop...
I found two linens....


 This table cloth for $4.00
This is a bed skirt.. I love the crochet around it...
 I think it was a steal for $6.00!!

There is so much material and lace...
I can think of many things to use it for besides a bed skirt!

I just love vintage linens!!

It's hot...

Well its hot for us Canadians!!....
It is into the high 90's...and we are cooking!
So much for bike rides and walks during the day!!
This is how we spend our days...
 In the evenings we head out for our walks...
 A great time for reflection!!

Lettuce Day Weekend!!

We had a great weekend....
We started it off by biking for our Bountiful Basket.... 
two bike baskets worth of fruit and veggies!
We not only enjoy the produce...we enjoy seeing what we get!! 
And for the next couple weeks all our meals 
are planned around the fruit and vegetables!!

Then we biked on down  to Lettuce Days !
Hubby couldn't wait... 
the first thing we had to do was have a Root Beer Float 
at Zemer's Homemade Root Beer Stand... 
We had bought the mugs last year....
so if you bring the mugs back you get refills for $1.00!! 
This deal lasts as long as you have the mugs...
 We both coloured the Lettuce Day Poster1
There we loads of food demonstrations! 
Fruit and Veggie carver! 
Entertainment! 
Food!!
It was a wonderful day! 
Before we left....
Only one of us....
Had to have another Root Beer Float!
(Good thing...this is the only Zemers Root Beer Place we  know of:)
